This healthy avocado chicken salad is creamy, fresh, and packed with protein. Made without mayonnaise, it’s a lighter and nutritious option perfect for lunch, meal prep, or a quick dinner.

Ingredients
  

  • 2 cooked chicken breasts shredded or diced
  • 1 ripe avocado
  • ½ small red onion finely chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons Greek yogurt
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh parsley optional

Method
 

  1. Cook the chicken if not already cooked (grill, bake, or pan-cook until fully done). Let it cool, then shred or dice.
  2. In a bowl, mash the avocado until smooth but slightly chunky.
  3. Add lemon juice, Greek yogurt, and olive oil. Mix well.
  4. Add the cooked chicken and chopped red onion.
  5. Season with salt and black pepper.
  6. Mix everything until well combined and creamy.
  7. Garnish with fresh parsley if desired.
  8. Serve immediately or chill for 15 minutes for better flavor.
